Aubergine Rollatini with ''MozzaVella''

An ultra comforting dish of aubergine rolls with a creamy vegan ''MozzaVella'' filling, layered with a delicious marinara sauce and baked in the oven until it's bubbling and golden.⁠ A taste of Italy that everyone will love!⁠

Ingredients

  • 2 aubergine
  • 3 MozzaVella
  • 1 garlic
  • 1 can of chopped tomatoes
  • salt and pepper

How it’s done

Slice 2x aubergine approx. 1/2 inch thick and then griddle them for a minute or two on each side. Allow to cool.⁠ Slice 'MozzaVella' (we used 3x packets) and then place one slice on each aubergine and roll up. continue until all rolled.⁠ Heat 1 chopped garlic in pan with oil and can of chopped tomatoes/passata and season with salt and pepper.

Pour half the tom sauce in a baking tray, then place aubergine rolls on top. Pour rest of sauce over the rolls.⁠ Bake in the oven for 25mins until cooked.⁠

Serve with fresh basil.⁠
