Cottage cheese spread on sweet potatoes

Ingredients

Serves 2:

  • 150 g Züger organic cottage cheese lactose free
  • 8 radishes (approx. 80 g)
  • 5 cherry tomatoes (approx. 50 g)
  • ¼ cucumber (approx. 90 g)
  • 5 g chives
  • 1 medium-sized organic sweet potato (approx. 200 g)
  • 1 tbsp olive oil
  • Salt

How it’s done

Thoroughly wash the sweet potato, dry and cut into 5 mm thick slices. Heat up the oil in a pan and fry both sides of the sweet potato slices until slightly golden, adding a pinch of salt. Leave the slices to dry on some kitchen roll. Meanwhile, wash the radishes, cherry tomatoes and cucumber and chop them into small cubes. Wash the chives, dry and finely chop. Mix in with the diced vegetable and cottage cheese. Add salt to taste. Serve on the golden sweet potato slices.

Tip: Fresh radish leaves are the ideal decoration for placing under your cottage cheese and sweet potato crostini.
