How it’s done
Preheat the oven to 200°C – remove the tomato stalks, then halve the tomatoes and place them on a baking tray lined with baking paper – marinate with olive oil, salt, pepper and a pinch of sugar – add the bread slices, drizzle with olive oil and place crushed garlic on top – slice the courgette into thin strips and season with a little salt, pepper and olive oil – roast the courgette in the oven for five minutes – bake the bread slices in the oven for approx. 10 minutes, and the tomatoes for approx. 20-30 minutes – cut the mozzarella into slices and lay on top of half of the still-warm tomato halves – season the mozzarella with salt, pepper, balsamic vinegar, lemon zest and a little olive oil to taste – sprinkle with fresh oregano and basil – finely chop the spring onions and spread over the top – place the other tomato halves on top as a lid and serve while still lukewarm.

– the tomatoes can be easily peeled after they’ve been cooked
– remove the garlic from the bread slices before serving
– the tomatoes, bread and courgette can also be cooked on the grill
