Ingredients

  • 2 tbsp lactose-free cottage cheese
  • 2 char or trout fillets
  • 1 sprig dill
  • 2 egg whites
  • 4 stalks aspargus
  • 1 shallot
  • 1 lemon
  • Salt, pepper
  • Olive oil

How it’s done

Fish burger; a healthy and modern spring dish
Cut the char into small cubes. Chop the shallot and dill and add to the fish. Add a lightly beaten egg white and season with lemon zest, salt and pepper. Fry in a pan with a little fat. Use a peeler to cut the sparagus into slices and marinate raw in a little olive oil, lemon juice, salt and pepper. Place a spoonful of cottage cheese on the char fritters and garnish with the asparagus salad.
