Spinach salad with cottage cheese

Ingredients

  • 2 tubs Züger Hüttenkäse cottage cheese
  • 1 red apple, e.g. Gala
  • 80 g walnuts
  • 200 g fresh baby spinach
  • 80 g dried cranberries
  • 4 tbsp fresh lemon juice
  • 2 tbsp honey
  • 4 tbsp olive oil
  • Salt
  • Freshly ground black pepper

How it’s done

The apple doesn’t fall far from the cottage cheese
Slice the apple into quarters, remove the core, then thinly slice the quartered apple. Roughly chop the walnuts and toast them lightly in a dry pan. Combine the lemon juice with honey and oil in a bowl. Arrange the baby spinach and apple slices on four plates and top with dressing. Top each plate of salad with ½ tub Züger Hüttenkäse cottage cheese. Garnish with the toasted walnuts and cranberries.
