Vegan tomatoe-mozzarella baguette

Today we have for you a fun summer apero or the perfect barbecue side dish: crispy tomato 'mozzarella' baguette with the ',MozzaVella".

Ingredients

For the baguette:

  • 300g flour
  • 8g baking powder
  • 1 tsp salt
  • 180ml mineral water
  • 1 tbsp olive oil
  • 1 tsp apple cider vinegar

For the topping:

  • 1 pack MozzaVella
  • 2 ripe tomatoes

How it’s done

Preheat the oven to 180 degrees convection. Mix all the ingredients for the dough in a bowl and knead into a dough. Form two baguettes on enough flour.
Optional for the crust: coat 1 tsp cornflour with 1 tsp olive oil + 1 tsp water.
Bake for approx. 30 minutes or until golden brown.

Cut the baguettes and top with tomatoes and slices of MozzaVella. Drizzle with olive oil and decorate with salt and basil.
