Ingredients

  • 330g wheat flour
  • 3 tsp neutral oil
  • 200ml water
  • 1 tsp salt
  • 125g cream Vega
  • juice of 1/2 lemon
  • vegan mozzarella
  • 3 peppers (yellow, orange, red)
  • 100g arugula
  • 50g pine nuts

How it’s done

Mix the flour with oil, water and 1 tsp salt and knead into a firm dough, preheat the oven to 220deg (top/bottom heat). Mix the cream and lemon juice, season with salt. Wash the peppers and cut them into pieces. Roll out the dough, spread with the cream and the peppers and cheese. Place the tarte flambée on a baking sheet lined with baking paper and bake in a preheated oven for about 20 minutes, until golden brown (baking time varies depending on the oven). Toast the pine nuts in a pan on the highest setting (without adding oil) for about 5 minutes until golden brown. Be careful- they need to be turned constantly during this process so they don't burn. Garnish the tarte flambée with arugula and pine nuts before serving.
